crab salad (prossessed crab meat) you can substitute lobster as well.

1 pkg of crab or lobster
1 TBS old bay seasoning
1 lemon freshly squeezed
1 TSP lemon zest
1 celery stalk finely chopped
pinch of pepper
1 T salt
1 C mayonaise
italian bred crumbs or panko
hot dog buns
1 tomato

Prep- shred the crab or lobster till a stringy consistancy
add all seasonings and veggies and mix till almost a patty consistany not too thick not too thin.
toast the buns in butter and crisp the sides.
add your salad on the bun.
slice the tomato and slice almost in 1/2 keeping the tomato still intact making an S on top of the salad as garnish and as a texture thing.

this is just a guideline, i like to add some fresh ground ginger for some bite to it.
